Lightshows aren't for everybody. Lots of keyboard enthusiasts don't even look at their keyboards and some even find lightning distracting. 

While I am sure there will be an option to turn them lightshow off, why is there not an option for those who'd rather not have the LEDs?

Because making a handful of boards without LEDs is actually more expensive overall than doing all of the boards with LEDs.

Fair ennough. But there will be options to not turn them on? (except the caps lock of course)

Of course! You don't ever have to see the LEDs on (except the soft SHIFT-LOCK). That is the default mode.
